Apple & Cinnamon Vegan Digestive Biscuits

Biscuits are by far some of the most convenient and delicious snacks you can have - crunchy, sweet, filling and probably one of the best choices for pairing with your daily cup of joy (whether that's coffee, tea or hot chocolate). 

While many supermarket-bought biscuits aren't suitable for vegan or gluten-free diets, or lack the nutrients you may want to get to support overall health - you can always make your own at home in batches. In fact, that's simpler and quicker than you'll ever think, and is guaranteed to nourish your body and delight your taste buds. 

This Apple & Cinnamon superfood version of the digestive biscuit is ready in under 30 minutes, uses only 7 ingredients and supports digestive health, healthy cholesterol levels, and immunity.

Ingredients

  • 150g Naturya Coconana Chia Overnight Oats
  • 4tbsp Naturya Apple & Cinnamon Gut Feel
  • 50g Naturya Coconut sugar
  • 1/3 cup Naturya Coconut oil
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 3 tbsp plant based milk

Method

Preheat the oven at 180°C. 

Line a baking sheet with baking paper.

Mix the coconut oil and coconut sugar together. 

Add the Overnight Oats, cinnamon, baking powder and Gut Feel flaxseed blend to the coconut oil and sugar mixture, then add the milk and mix everything well. 

Roll a little mixture in your hands and flatten on the lined baking tray. Continue with the remaining mixture. 

Place in the oven for about 12-15 minutes. 

Allow to cool for a couple of minutes then cool the biscuits on a wire rack.
