Acai Granola Bars

These granola bars are bursting full of fruity flavours with Acai powder, Goldenberries, White Mulberries and Goji Berries. Enjoy for breakfast or as a snack for an energy boost.

    Ingredients

  • 200g rolled oats
  • 100g pumpkin seeds
  • 1 ½ cups (40g) unsweetened puffed rice cereal
  • 50g Naturya Goldenberries
  • 25g Naturya Goji Berries
  • 25g Naturya White Mulberries
  • 2 tbsp Naturya Acai powder
  • 5 tbsp (75ml) agave syrup
  • 3 tbsp (45ml) maple syrup
  • 125g cashew butter
  • 2 tbsp Naturya Cold Pressed Coconut Oil
  • 1 tsp vanilla extract

    Method

  • Preheat the oven to 160°C (fan oven)
  • Combine the oats and pumpkin seeds on a baking tray
  • Place in the oven and bake for 10-15 minutes
  • Occasionally remove the tray from the oven to stir the mixture
  • Remove the baking tray from the oven once the oats have turned a golden colour
  • In a small saucepan, add the agave syrup, maple syrup, cashew butter, Coconut Oil and vanilla extract
  • Over a low heat, combine and stir the ingredients until well mixed. Remove the saucepan from the heat and set aside to cool
  • Transfer the cooled oats and pumpkin seeds to a large mixing bowl
  • Add the Goldenberries, Goji Berries, White Mulberries, puffed rice cereal and Acai powder. Stir until well combined
  • Pour the contents of the saucepan over the dry ingredients. Stir and mix well
  • Line a brownie tin with parchment paper
  • Pour the mixture into the brownie tin
  • Press the mixture firmly and spread evenly across the brownie tray
  • Place the tray into the fridge for a couple of hours until the mixture has firmed up
  • Remove the tray from the fridge and slice into bars
