Cacao Lucuma Brownies

These brownies are so fudgy and indulgent. Adding Lucuma powder gives them a deliciously and naturally sweet caramel flavour.

Ingredients

  • 200g spelt flour (or buckwheat flour for a gluten free alternative)
  • 50g Naturya Lucuma powder
  • 1 tbsp Naturya Chia Seeds
  • 1 tsp bicarbonate of soda
  • 60g Naturya Cacao powder
  • 250g coconut sugar
  • 125ml almond milk
  • 130g Naturya Cold Pressed Coconut Oil, melted

Method

  • Preheat the oven to 170°C (fan oven)
  • Line a 25 x 18 x 4cm baking tin with baking parchment
  • Place the Chia Seeds in a bowl with 4 tbsps of water.
  • Stir well and leave for 10 minutes until the mixture has thickened up
  • Place the spelt flour, Lucuma powder, bicarbonate of soda, Cacao powder and coconut sugar into a large bowl. Stir and mix well, removing any lumps
  • Add the chia mixture, almond milk and melted Coconut Oil
  • Stir until the mixture is well combined
  • Pour the mixture into the lined baking tin
  • Place the tin in the heated oven and bake for 25-30 minutes until the brownies are slightly fudge when a skewer is placed in the middle
  • Remove the baking tin from the oven. Leave to cool in the tin for 10 minutes. Then transfer to a wire rack to cool down
  • Once cooled, cut into brownie squares
