Ingredients

Method

In a pan (with a lid) add a little olive oil and then add your chopped onion and a pinch of salt.

Allow to cook over a medium heat until softened and then add in your roughly chopped mushrooms.

Add the chopped garlic and season well. Allow to cook until the mushrooms have cooked and softened.

Add in your quinoa and stir through the mushroom mixture.

Then add in your stock and the Mushroom SuperBlend and stir through.

Pop a lid on and allow to simmer for approx 20 minutes until all the liquid has been absorbed and the quinoa is cooked.

Serve with some rocket or even some vegan creme fraiche!
