Cosmic Cacao Cake

This is a very adaptable basic raw chocolate cake recipe; you can vary it with any nut or seed to replace the sesame, and you can add any of your favourite flavourings such as peppermint, orange, cinnamon or vanilla. Play around and have fun, it’s what raw food prep is all about!

How to make

Ingredients

Base:

250 g or 2 cups sesame seeds

250 g or 2 cups cacao nibs

200 g or 2 cups lucuma powder

90 g or 2/3 cup coconut sugar

250 ml or 1 cup water

Icing:

500g or 2 avocados

30 g or 1/4 cup cacao powder

2 tbsp agave nectar

250g seasonal fruits

Method

  • Grind the sesame seeds up in a high power blender or grinder.
  • Transfer them to a large mixing bowl.
  • Grind the nibs up in the same way, and put them in the bowl too.
  • Add the lucuma and coconut sugar and give it all a good stir so it’s evenly mixed.
  • Pour in the water and stir it in so you have a thick cookie mixture.
  • Spoon it into a cake tin and pop in the fridge to set for three hours.
  • Once it’s ready, you can make your icing.
  • Peel the avocados, spoon out the flesh and put them in the blender.
  • Add the chocolate powder, agave nectar and blend it all together to a cream.
  • Spoon over the top and sides of the cake, so it covers the whole cake evenly.
  • Decorate the top with whatever seasonal fruit you choose; piling berries on top works particularly well.
  • Leftovers should keep for up to a week (as long as you hide them somewhere!).
