Chocolate, coconut and raspberry pot

This is a lovely vegan alternative to a regular chocolate mouse. It’s light and rather delicious. As well as vegan it is sugar free and loaded with super food goodness.

How to make

Ingredients

  • 1 ½ cup soaked cashew nuts
  • ½ cup melted coconut oil
  • 1/3 cup melted cocoa butter
  • 300 ml of creamed coconut milk
  • ¼ cup cacao powder
  • 1/3 cup naturya chocolate blend
  • ¾ cup soaked dates
  • 2 tsp. chia seeds
  • Raspberries
  • Cacao nibs
  • Shaved coconut

Method

  • Soak the dates and cashew nuts in water for 1-2 hours, once soft put into the food processer, and blend until smooth.
  • Add the melted coconut oil, cacao butter and the coconut milk.
  • The mix should be soft, add the cacao powder and naturya chocolate blend and blend.
  • Remove from the blender and divide the mix into 4 ramekins, refrigerate for and hour.
  • Once set, top them with beautiful plump raspberries some shaved coconut and a sprinkling of cacao nibsSoak the dates and cashew nuts in water for 1-2 hours, once soft put into the food processer, and blend until smooth.
